The training course "Italian Wine specialistis conceived as a real sensory experience of famous Italian regions for wine production: Umbria and Tuscany. It is meant to be an interesting and fascinating journey through lands, vineyards, wine cellars, wine bottles and people whose life is devoted to wine and wine culture.

The core choice of this “voyage” are Umbrian and Tuscan wines with recognized Italian quality labels such as DOC (“Controlled designation of origin”) and DOCG. (“Controlled and Warranted designation of origin”) Tuscany stands out in the Italian wine production landscape with its famous and appreciated vineyards, whereas Umbria is “the younger sister”, but just as interesting to discover, since it produces splendid wines in a perfect combination with the neighboring Tuscany.

The training course is therefore an exciting opportunity for knowledge and cultural enrichment, which guides the students into the understanding of the nature, selection and purchase of wines from these two Italian regions. The course gives access to a vast range of wines, grape typologies and an up-to-date “portrait of the wine industry”. Students will also work on a Wine List for the best combination with food and for the creation of a Wine - based Menu.

Goals

Gaining knowledge about the typical Umbrian and Tuscan wine products and the development of technical skills necessary to evaluate Italian wines with Sensorial understanding, particularly from Umbria and Tuscany.

The wines will be studied according to market segments, skills necessary for the supervision of supply, quality control, organization and management of the restaurant’s cellar.

 

Skills

  • Recognize the organoleptic characteristics of Umbrian and Tuscan wines;
  • Describe the characteristics of wines (quality, history, variety, production area, year, etc.).
  • Carry out a sensory evaluation of the product and associate market segments;
  • Wine and food combination in Italian cuisine
  • Italian cuisine in wine based recipes

 

Unit 1 - Umbria 

  • National geography of wines – Umbrian wines
  • Major wine producing areas of Umbria
  • History of the regional wines
  • The selection of food and wine pairing
  • The restaurant’s cellar, management and procurement
  • Pricing policies: objectives, factors to consider and procedures for pricing
  • Sensorial positioning according to market segments
  • Sensory analysis of the 5 typologies of Umbrian wines.
  • Regional food and wine pairing
  • Wine in the kitchen: practical elaboration of Umbrian wine-based recipes.
  • Study tour: at Umbrian wine cellars and the Regional Enoteca of Orvieto


Unit 2 - Tuscany 

  • National geography of wines -Tuscan wines
  • Major wine producing areas of Tuscany
  • History of the regional wines
  • The restaurant’s cellar, management and procurement for Tuscan wines
  • The selection of food and wine pairing
  • Sensorial positioning wines according to market segments
  • Sensory analysis of the 5 typologies of Tuscan wines.
  • Wine in the kitchen: practical elaboration of Tuscan wine based recipes.
  • Study Tour: at wineries in Montalcino, Montepulciano and Chianti.
